Zucchini, Sunflower Seed, Black Bean Burgers

These burgers have a secret nutritional powerhouse added to them you can’t detect; Hemp flour. Hemp flour is full of protein and fiber, check out these stats for 2 tablespoons:

Zucchini, Sunflower Seed, Black Bean Burgers

Yields:9 burgers

1 can of black beans, rinsed
1 3/4 c zucchini, grated
1/4 c onion, diced
2 garlic cloves, minced
2 tsp tamari
1 tsp garam masala
1 tsp cumin
1/2 tsp thyme leaves
Sea salt and cracked pepper to taste
1/4 c ground flax
1/4 c sunflower seeds
3/4 c hemp flour

1) Preheat oven to 350 F and line a baking sheet with parchment paper.
2) In a blender or food processor mix beans, zucchini, onion, garlic, tamari, and spices. There should still be chunks of beans and zucchini in the mix, you don’t want it completely smooth.

3) Transfer mixture to a bowl and add hemp flour.

FYI hemp flour is green, I did not know that until I opened the bag.

Mix in the hemp flour until combined well. Then add ground flax and sunflower seeds. Mix until thoroughly incorporated.
4) Shape into 9 patties and bake in oven for 30 minutes, flipping halfway.

I served mine on a whole wheat english muffin, that also had sunflower seeds in it and ketchup, avocado, and tomato. It was tasty, but not the best i’ve made before. The texture was off a bit too, I think I would add oats next time and let the flax soak in 1/4c of water first.
