Breakfast is my favorite meal of the day. If I had to choose one meal to eat for the rest of my life, hands down I would choose oatmeal. Here is one of my favorite concoctions.
1/3 cup rolled oats
2/3 cup milk (cow, almond, or soy are the varieties I use)
cinnamon, nutmeg, and cloves
pumpkin (big scoop)
cottage cheese (2 spoonfuls)
pumpkin seeds, toasted
In a pot add oats, milk, spices, and pumpkin. Heat on medium heat until boiling. Once boiling lower heat to med.-low and cook 10 minutes, stirring occasionally. After 5 mins. add cottage cheese and stir constantly to blend into oat mixture. Once done pour into a bowl and drizzle almond butter and maple syrup on top, sprinkle with toasted pumpkin seeds (I toast them in the microwave for about 1 minute) and coconut. Enjoy with a small spoon!
